摘要(Abstract):

改性胶原在制革、生物医学材料、食品等领域具有广泛的应用。研究改性机理、评价改性剂和改性工艺的优劣,以及对改性材料的失效或变性过程的分析,都需要从分子层面对胶原改性前后、失效或变性前后的微观结构进行表征。综述了X射线衍射(XRD)和核磁共振(NMR)在生物医学、食品工业等领域的一些应用进展,以期为制革领域,特别是为鞣剂、鞣法与鞣革理论的研究提供借鉴。
Collagen is rich in sources,and its modified derivatives are widely used in leather,biological and medical materials,food industry and other fields. Modifier and modification process are important factors for determining the value of collagen derivatives. It is very important to evaluate the quality of modifier and modification process and analyze the conformational changes before and after collagen modification in the level of molecules. The newly applications of X-ray diffraction(XRD)and nuclear magnetic resonance(NMR)on the structural characterization of collagen modification were reviewed,which would give some references for the study of tanning agents,tanning methods and tanning theory.
